Baked Tilapia Rolls

- 8 thin tilapia fillets
- 10 ounces frozen Prince Edward green bean mixture or regular green beans
- OR
- 32 thin asparagus spears
- 1 lemon
- butter
- seasoned salt
Partially cook (steaming works best) the vegetables. Lay one fish fillet flat. Sprinkle with seasoned salt. Place a few of the green beans (4-6 depending on size of fish) on the fillet crosswise and roll the fillet up (so the beans are sticking out the sides). You can use asparagus instead of the beans if you wish. Stick a toothpick into the fish to hold it together. Place in a greased baking dish. Repeat with remaining fillets. If using the Prince Edward blend, scatter the carrots in the baking dish with the fish. Cut half the lemon into 4 thin slices, then cut the slices in half. Squeeze the remaining half the lemon over the fish evenly. Dot with butter. Lay the lemon slices over the top of the fillets. Bake at 375 degrees F for 20-25 minutes (total time will depend on thickness of the fish). You can baste the fish once during cooking with the juices collected in the pan (they will be nice and lemony-buttery). Cook's Note: Prince Edward blend is a combination of yellow and green beans mixed with baby carrots.
