- 4 medium sweet potatoes
- 1/2 cup butter or margarine
- 1 cup white sugar
- 1 cup brown sugar
- 1 tablespoon vanilla extract
- 1 teaspoon ground nutmeg
- 2 tablespoons flour
Bring a pan of water to a boil over medium-high heat. Add the unpeeled sweet potatoes and bring the water back to a boil. Let boil for 10 minutes then remove the sweet potatoes with a slotted spoon and set aside to cool. Preheat the oven to 325 degrees F. Melt the butter in a saucepan over medium heat. Whisk in the sugar, brown sugar, vanilla, nutmeg, and flour. Mix until well combined. Remove from the heat and set aside. When the sweet potatoes are cool enough to handle, peel off the skins (they should come off easily) and slice the sweet potatoes into rounds. Place the sweet potatoes in a shallow baking dish. Evenly drizzle the butter mixture over the sweet potatoes. Place the baking dish in the oven and bake at 325 degrees F for 1 hour. Serve hot.
