Applejack Brandy Sauce (Production Recipe)
Yield=5 Gallons/213 each 3oz portions
20 minutes
Ingredients

8 Lbs IQF Sliced Apples
1 Lb Diced White Onions
2 Gal Apple Juice Concentrate
1 1/2 Gal Tap Water
2 Liters Applejack Brandy
2 Oz Ground Cinnamon
4 Oz Granulated White Sugar
3 Cups Cornstarch Slurry
1 Lb Softened Butter

Method

1. Melt half a pound of the butter and saute the diced white onions until lightly caramelized.
2. Add the IQF Apples and continue saute until heated throughout.
3. Deglaze with the Applejack Brandy.
4. Add the apple juice concentrate and just enough tap water to cover.
4. Bring mixture to a light boil.
5. Add cinnamon and sugar and stir. Taste for flavor.
6. Adjust seasoning to taste with kosher salt, cinnamon, brandy, or apple juice concentrate.
7. Add cornstarch slurry to thicken until sauce just coats the back of a spoon (nappe).
8. Finish with softened butter.

NOTE: This sauce, while simple complements, pork, ham, and chicken nicely.
