Serves 6

1/2 cup low fat milk
2 Tbsp chopped pimento
2 Tbsp chopped parsley
2 medium potatoes, peeled, thinly sliced
3 medium onions, thinly sliced
1/2 cup shredded Swiss cheese

Combine milk, pimento and parsley in bowl. Layer potatoes, onions, salt and pepper to taste and milk mixture 1/2 at a time in greased 6x10 inch baking dish. Bake, covered, at 350 F for 1 hour or until potatoes are tender. Top with cheese. Bake until cheese melts.
