Serves 4

1 (2 1/2 to 3 lb) chicken, cut up
2 cup chopped celery
1 large onion, chopped
2 chicken bouillon cubes
1/4 tsp each salt and pepper
1 can cream of chicken soup
1 can cream of mushroom soup
3 Tbsp melted margarine
1/2 (8 oz) pkg corn bread stuffing mix

Combine chicken with celery, onion, bouillon, salt, pepper and water to cover in saucepan. Simmer until chicken is tender. Strain, reserving chicken and vegetables. Chop cooked chicken. Combine chicken, vegetables and soups in bowl; mix well. Spoon into 9x13 inch baking dish. Mix margarine and stuffing mix in bowl. Sprinkle over chicken. Bake at 350 F for 30 minutes.
