Serves 8

2 lb lean ground beef
1/2 cup oats
1 cup onion, chopped
1/2 cup tomato juice
2 tsp salt
pepper to taste
3 slices onion
1 cup tomato juice

Combine first 6 ingredients in bowl; mix well. Shape into loaf in baking pan. Top with onion slices. Pour 1 cup tomato juice over loaf. Bake at 325 F for 1 1/2 hours, basting occasionally with pan juices. Skim juices before serving.
