1 tsp olive oil
1/2 cup chopped onion
2 cloves garlic, minced
1/4 tsp dried thyme leaves
1/2 cup quick-cooking oats
1/3 cup milk
1/4 cup finely chopped red bell pepper
1/4 cup finely chopped green bell pepper
1/4 cup shredded carrot
1/2 cup ketchup
1 large egg
1/4 cup chopped fresh parsley
1 tsp Dijon mustard
1/2 tsp salt
Black pepper to taste
1 1/22 lbs extra-lean ground beef
Preheat the oven to 350. Line a baking sheet with foil and set aside. In a small fry pan, heat the oil over medium-low heat. Add the onion, garlic, and thyme and cook, stirring, until the onion is translucent, about 5 minutes. Set aside to cool.
In a large bowl, combine the cooled onion mixture with the remaining ingredients, except for the meat. When the mixture is well blended, add the meat by hand but do not overwork it. Place the meat mixture on the baking sheet and shape into a loaf pan. Bake for about 1 hour or until the center reaches 160 degrees on a meat thermometer inserted in the middle. Let rest for 10 minutes before serving. Serves 4
