Serves 8

8 oz lean ground beef
1 large onion, chopped
6 medium tomatoes, chopped
8 large green peppers, seeded
3 cups grated Monterey Jack cheese
3 cup kidney beans
2 Tbsp chopped parsley
1 clove of garlic, minced
1/4 tsp each basil, oregano, salt and pepper

Brown ground beef in skillet, stirring frequently; drain. Saute onion and tomatoes in skillet; drain. Parboil green peppers in salted water in saucepan for 3 minutes; drain. Mix ground beef, tomato mixture and remaining ingredients in bowl. Spoon into green peppers. Arrange in baking pan. Bake, covered, at 325 F for 30 minutes.
