Serves 6-8

2 cups dried white beans
8 cups boiling water
2 cups left over ham
1 pkg dry onion soup mix
1/2 cup ketchup
1 tsp salt
3 stalks celery, chopped
cayenne pepper to taste

Wash and sort beans; place in Dutch oven or large kettle. Add ham or ham hock, soup mix, ketchup, salt and pepper. Cook until beans are almost tender: add celery and 5 cups water. Simmer until celery is tender.
