Broiled Halibut with Herbed Mustard

Serves 4

Vegetable oil spray
4 halibut or other mild fish fillets (about 4 oz each)
1/4 tsp salt
1/4 tsp pepper
3 Tbsp light tub margarine
1 Tbsp Dijon mustard
1 tsp grated lemon zest
1/2 tsp diced oregano, crumbled

Preheat broiler. Line broiler pan with aluminum foil. Lightly spray foil with vegetable oil spray.
Rinse fish and pat dry with paper towels. Place fish on foil. Sprinkle fish with salt and pepper. Lightly spray fish with vegetable oil spray.
Broil fish (on one side only) about 4 inches from heat from 6 minutes (4-6 minutes for thinner fish) or until it flakes easily when tested with a fork. Transfer fish to a serving platter. Meanwhile, in a small bowl, stir together remaining ingredients.
To serve, spoon margarine mixture over fish.
