Serves 1

1 tsp cooking oil
3/4 cup frozen hash brown potatoes
3/4 cup frozen Italian mixed vegetables
1/2 cup grated mozzarella cheese

Heat the cooking oil in the frying pan on medium high for 2 minutes. Add the potatoes. Cook for about 4 minutes, stirring occasionally, until golden brown. Turn down the heat to medium low.
Put the vegetables into the bowl. Microwave, covered, on high for about 90 seconds until thawed. Add to the potatoes. Cook for 3 minutes, stirring constantly.
Sprinkle with the cheese. Do not stir. Cover with the lid. Cook for about 2 minutes until the cheese is melted.
