Makes 15 crisps
1/4 cup butter
1 cup chopped pitted dates
2 Tbsp water
1/2 cup crisp rice cereal
1/2 cup raw sunflower seeds
1/3 cup medium unsweetened coconut
Melt the butter in the saucepan on medium.
Add the dates and water. Cook, stirring constantly, until the mixture is bubbling. Turn down the heat to low. Cook for about 3 minutes, stirring constantly, until the mixture is thick. Remove the pan from the heat. Cool for 10 minutes.
Add the cereal and sunflower seeds. Stir well.
Put the coconut onto the plate. Using a 1 Tbsp measure, drop the date mixture onto the coconut. Roll the mixture in the coconut until coated. Roll coconut crisps between your hands to make balls. Arrange on the serving platter. Chill in the refrigerator.
