Roast Beef

Category: Meat

3 to 4 lb roast beef (good quality tip, rump or bottom round)
1/2 to 1 tsp coarse salt
1 tsp finely ground coffee
1 tsp black pepper
1 tsp paprika
1 tsp garlic powder
1 tsp dried red pepper flakes

Trim and tie roast if needed. Rub roast with salt. Combine coffee, pepper, paprika, garlic powder; sprinkle over beef. Place roast on a rack in a roasting pan.
Roast in a 325 F oven for 25-30 minutes per pound or until internal temperature reaches 140. Let stand at least 15 minutes before carving.
