- 1 tablespoon reduced calorie margarine
- 2 tablespoons chopped onion
- 1/4 cup chopped mushrooms
- 1/4 cup diced lean ham
- 2 large eggs, lightly beaten
- 1/2 cup egg substitute
Melt margarine in a medium skillet. Add onion and cook until almost soft. Add mushrooms and cook through. Stir in the ham. Add eggs, salt and pepper. Cook, stirring frequently, until almost set.
