2 lb chicken wings
1 cup butter milk
Juice of 1/2 a lemon
2 cloves of garlic; finely chopped
1/2 tsp hot pepper sauce
1/2 tsp salt
1/8 tsp black pepper
1/2 cup yellow cornmeal
1/2 cup dry seasoned bread crumbs

Cut off wings and save tips for soup or stock. Cut trimmed wings in half at joint. Combine buttermilk, lemon juice, garlic, hot sauce, salt and black pepper in plastic food storage bag. Add chicken wings and seal bag; toss to coat. Refrigerate 2 hours. Heat oven to 425 F. lightly grease a large baking pan. Combine cornmeal and bread crumbs in a plastic food storage bag. Drain chicken wings well. Add to crumb mixture in plastic bag, shake several times or until wings are completely coated. Arrange wings in prepared pan. Coat chicken lightly with nonstick cooking spray. Bake in heated 425 F oven, 35 minutes or until tender and golden.
