Bean and onion salad

Makes 8 servings
Complete in 50 minutes

2 Tbsp vinegar
1 tsp Dijon mustard
1/2 cup olive oil
1 tsp salt
1/8 tsp black pepper
1 lb green beans, trimmed
1 lb yellow wax beans, trimmed
1 onion, thinly sliced

Whisk vinegar and mustard in a small bowl. Whisk in oil, salt and pepper. Steam green and yellow beans for 10 minutes or unti crisp tender. Dump beans in a colander and run under cold water to stop the cooking; drain.Combine beans and onion in serving bowl. Add dressing. Let stand at room temperature for 30 minutes for best flavor, regrigerate overnight. Serve at room temperature.
