Mexican Skillet Casserole

- 1 pound ground beef
- 1 small onion, chopped
- 1 can (14 ounce size) tomatoes, undrained, chopped
- 1 can (15 ounce size) ranch-style beans
- 1/2 cup uncooked rice
- 2 tablespoons chili powder
- salt, pepper, and garlic powder to taste
- 1 cup water
- 1/2 cup shredded cheddar cheese
In large skillet, brown ground beef and onion until meat is brown and onion is tender; drain. Add tomatoes, beans, rice, seasonings, and water. Cover, bring to a boil; reduce heat. Simmer 20-25 minutes or until rice is tender, stirring occasionally. Top with shredded cheese. Cook another 5 minutes or until cheese melts.
