  • 1 package (15-18.25 ounce size) white cake mix
  • 1 package (3.5 ounce size) instant pistachio pudding mix
  • 1/2 cup oil
  • 3 tablespoons water
  • 2 eggs
  • 1/2 cup chopped pistachios
  • 1/2 cup flaked coconut

Preheat the oven to 350 degrees F. Grease a baking sheet.

Combine the cake mix, pudding mix, oil, water, and eggs in a bowl. Beat well with a spoon. Stir in the pistachios and coconut until just mixed.

Drop the cookie batter by teaspoonfuls onto the prepared baking sheet. Place in the oven and bake at 350 degrees F for 10 minutes or until lightly browned around the edges.

Remove the baking sheet from the oven and let the cookies cool for 1 minute before transfer to a wire rack to cool completely.

Store the cookies in an airtight container.
