Peanut Butter Cookies

1/2 c. raspberry preserves, strained to remove seeds
1/4 c. salad oil
1 T. rice wine vinegar
1 T. cider vinegar
2 T. dry white wine
1 tsp. Dijon mustard
salt and pepper

Place preserves in medium bowl; gradually whisk in oil.
Add vinegars, wine and mustard; stir to blend.
Season with salt and pepper to taste.
Refrigerate for at least 2 hours to marry flavors.
