1 Can Spam luncheon meat, diced
1 TBSP veg oil
1 small onion, small dice
2 eggs, lightly whisked in a bowl, set aside
1 jalapeno pepper, take caution to remove seeds and ribs
1/2 cup shreaded carrot
2 ribs boy choy cabbage (or your fav cabbage)
2 TBSP soy sauce
ground pepper
3 cups cooked white rice
1/4 cup water, white wine or chicken broth

In a skillet or large dutch oven... brown diced onion in 1 TBSP oil
Add jalapeno and cook 2 minutes. Remove and set aside.
Add diced spam and cook on MED until well browned and carmelized.
Add onion, jalapeno, carrot; stir fry 2 minutes.
Add all the rice and combine; cook 2 minutes.
Season with pepper. Push rice to one side of pan and add egg and soft scramble them add into rice mixture; toss.
Add in soy sauce. Toss easily.
Add cabbage over top of rice mixture and then pour your liquid over top. Add a lid turn down heat to low and cook 5 minutes til cabbage is wilted. Give fried rice another stir to combine.
If you like, add 1 more TBSP oil over top and toss again.. to give the dish a nice gloss.

Vegies can be varied in this dish to suit your taste
