Ready in: 30-60 minutes

  • 1 can (12 ounce size) Spam with 25% Less Sodium, sliced into 8 pieces
  • 1 1/2 cup short-grain rice
  • 2 cups water
  • 1/4 cup rice vinegar
  • 1 teaspoon brown sugar
  • 8 half sheets (hand roll size) nori
  • 1/4 cup carrot, shredded
  • 1/2 cup cucumber , slices
  • 1/4 cup green onion, chopped
  • wasabi

Combine rice and water. Bring to a boil, reduce to simmer, cover for 20 minutes or until all water is absorbed. Mix sugar and vinegar, add to finished rice and fluff with a fork.

Grill Spam slices in skillet until heated thoroughly.

Spread rice mixture on sheets of nori; arrange carrot, onion, cucumber and Spam slices. Fold nori over filling and stick with rice.

Serve with wasabi.
