2 tsp olive oil
1/2 cup diced onion
1 cup diced red pepper
1/2 cup diced celery
1 pound peeled and deveined medium shrimp
1 cup canned black eyed peas or black beans rinsed and drained
2 TBSP minced parsley
salt and pepper to taste
Dash crushed red pepper

In a medium skillet over medium high heat, heat the oil. Add the onion and saute for 2 minutes. Add the red pepper and saute for 2 minutes. Add the celery and saute for 2 minutes.

Add the shrimp and saute until the shrimp turn pink about 5 - 6 minutes. Add the beans and parsley. Season with the salt, pepper and crushed red pepper. Cook 1 more minute.
