Your favorite artisan bread, sour dough works well here, but so does a great whole wheat. I use 4 oz.Tuna steaks that can be sauted quickly or grilled. The marinade is optional, but adds tang and a subtle sweetness. Salt & pepper is all you need if you decide against the marinade!

Serves 6

6-4 oz Tuna boneless fillets
1-8 oz cream cheese
8 oz grated smoked Gouda
¼ cup chopped chives
¼ teaspoon minced or pressed garlic
2 Tablespoons chopped parsley
12 slices of thick cut sour dough or your favorite bread
6 slices of tomatoes
6 slices of sweet onion
Romaine lettuce cleaned
12 slices of cooked bacon or pancetta

Optional Marinade for Tuna:
In a plastic sealable bag add:
¼ cup good quality balsamic vinegar
1/4 cup extra virgin olive oil
Pinch of salt & pepper
1 teaspoon Old Bay seasoning
Add your tuna steaks to the marinade and refrigerate for up to 4 hours.
Pat them dry before grilling or sauting.
Grill or sauté until desired doness-set aside to assemble sammies

Directions:
1. Marinade tuna fillets as directed.
2. In a food processor bowl add cream cheese and grated gouda, process for about 1 minute or until the ingredients are completely smooth and incorporated. Add remaining ingredients and pulse 3-5 times to mix ingredients until combined. Set aside.
3. Pat tuna dry & Grill or saute the tuna to desired doneness
To Assemble Sammies:
1.Pre-heat a griddle over medium heat.
2. Spread all the slices of bread with the cream cheese gouda mixture on one side.
3. Place tuna filet and two slices of bacon on one slice of bread.
4. Cover with another slice of bread.
5. Butter both sides of bread and place on a griddle and cook for 3-4 minutes or until golden brown, turn and brown on the other side.
6. To serve place a slice of tomato, onion, lettuce .
