ITALIAN STUFFED RED PEPPERS WITH TURKEY

A cool twist on stuffed peppers, I use red, yellow or orange bell peppers because they are sweeter. Your family will like this!

Serves 4-6

3 medium red, yellow, or orange bell peppers
1 1/2 pounds of ground turkey
1 small onion diced small
1 carrot shredded
1 cup shredded fresh spinach leaves
1 (32 oz) jar of your favorite spaghetti sauce
1(6.9oz) box of Jambalaya flavored or beef flavored pasta & rice (rice a roni)cooked according to package.
1/4 cup sliced black olives(optional)
2 cups canned French fried onions cheddar flavored.
1 large ball of fresh mozzarella sliced or 1 cup of shredded mozzarella cheese
Directions:
Cut peppers in half and clean out.
Preheat oven to 375 degrees
grease a 13x9 " baking dish
put pepper halves in single layer in the prepared dish.
In a microwave safe dish or on the stove top
brown ground turkey,onions, spinach and shredded carrots.
In the microwave on power level 6 it should take approximately 5 minutes. Make sure the meat is no longer pink.
Cook pasta & rice according to package directions.
In a large bowl mix the meat, cooked rice& pasta. optional black olives, 1/2 of the spaghetti sauce and 1 cup of french fried onions. Mix well
Divide evenly between the peppers in the baking dish.
Use the remainder of the spaghetti sauce to cover the tops of the peppers.
Sprinkle shredded cheese over each pepper half,or 1-2 slices of fresh mozzarella on each pepper half.
Sprinkle the remaining french fried onions evenly over each pepper half.
Bake at 375 degrees for approximately 25-30 minutes or until the peppers are just tender.

Note: you can use the pre-cooked package of brown rice in a flavor of your choice or just the plain unflavored one, you can also use instant brown rice. You will not need to pre-cook the instant rice.
