I enjoy polenta just about any way I can make it. This dish is a great way to introduce polenta to your family.
Serves 4-6
2 1/4 cups skim milk
1 1/2 cup water
1 1/2 cup polenta
1/2 cup grated sharp cheddar cheese or your favorite cheese
3 Tablespoon unsalted butter
1 1/2 cups canned fried onions
1 red pepper cleaned and sliced
1 1/2 pound ground beef or turkey
1-2 teaspoon ground chipotle powder or to taste
1 (4 oz) can of green chiles
1 (8 oz)can of condensed tomato soup
1 can tomatoes with chiles
salt & pepper to taste
1/2 cup shredded cheese additional for topping
Directions:
Pre-heat oven to 375 degrees
For Polenta Base:
Pour skim milk & water into a medium sauce pan. Bring to a boil over high heat.
Add the polenta and reduce heat to medium, stirring constantly to prevent sticking.
Cook until mixture bubbles, cook for about 3 minutes or until mixture is the consistency of loose mashed potatoes.
Remove from the heat and add the unsalted butter and cheese, stir to combine.
Grease a 3 qt. baking dish and pour the polenta into the baking dish, evenly covering the bottom of the baking dish.

In the skillet over high heat brown the ground beef until no longer pink.
Add the sliced red bell peppers and cook until the peppers are tender.
Add the chipotle powder, green chiles,tomatoes & tomato soup.
Pour the meat mixture over the polenta.
Sprinkle with the canned fried onions and cheese.
Bake at 350 degrees for 25-30 minutes.
Serve with sour cream and guacamole
