JALAPENO POPPER BURGERS

These combine two favorite foods, jalapeno poppers and a good burger! You can substitute chicken or turkey or even lamb for the ground beef.
ingredients

2 pounds of ground chuck

1 (4oz) can of jalapeno slices or 2-3 fresh roasted, cleaned and sliced.
4 oz of cream cheese-softened
4 oz of shredded sharp cheddar
2 tablespoons chopped fresh cilantro-optional
1 egg-beaten with 1/4 cup of water
1 cup of dry Bread Crumbs or crushed corn flakes. tortillas chips or seasoned corn chips, I've used them all!
salt & pepper to taste

In a medium bowl mix together the cream cheese, the shredded sharp cheese & cilantro and set aside.

Shape the ground beef into 8 thin patties.
Divide the cheese mixture into 4 parts
Place the cheese mixture 4 of the beef patties.
Place the remaining 4 beef patties on top of the cheese.
Seal the edges well-this is an important step because without sealing the burger edges well your precious cheese filling will escape!

Carefully place the each burger into the egg mixture coating it and then dredging it in the bread crumbs (breading choice), coating each burger well on all sides.

Let sit in the refrigerator for 1/3 hour.
Heat a skillet over medium high heat and put 1 tablespoon of butter or olive oil in the skillet.
Place the 4 burgers in the pan and cook until desired doneness.
Turn down heat and cover for well done burgers.
Watch that they don't brown and burn.
Serve with Salsa, fresh tomatoes and lettuce on a whole wheat bun or over rice.

Note-I use ground chuck because it is more flavorful and produces juicier burgers.
To make the fresh jalapeno's less hot, remove all the seeds and white pulp filament from the inside of the pepper after roasting and before slicing
