Skinned Chicken breasts 2 (1 per person)
Jar of roasted red peppers (use equivalent of 2 peppers)
1 Red onion sliced finely
Chesnut mushrooms 6 thickly sliced(can use other if desired)
double (whipping) cream 1/3 cup
1/2 pint chicken stock
1 tsp paprika
1 tsp cayenne pepper

Blend together 2/3 of the red peppers until liquidized. Add the chicken stock paprika and cayenne pepper and blitz till combined.

Brown onions, mushrooms and chicken in a large frying pan until golden but not so the chicken is fully cooked.

Dice the remaining roasted red peppers and add these to the pan. Now add the blended sauce aand bring to a boil and simmer for 10-15 mins until chicken is fully cooked.

Finally add the cream and season to taste
