Makes 6 servings.

1 1/2 lb. pork loin
6 slices bacon, diced
2 chipotle chiles, chopped
2 T. vegetable oil
1/2 T. ground cumin
1/2 T. dried oregano
3 cloves garlic, crushed
1 green pepper, cut into thin strips
1 red pepper, cut into thin strips
1 onion, cut in half and thinly sliced
6 c. coarsely chopped romaine lettuce

Slice pork in half lengthwise, and then cut crosswise thinly.
Toss pork, bacon and chipotle pieces together in small bowl, set aside.
Combine oil, cumin, oregano and garlic and heat in large nonstick skillet over medium-high heat.
Add peppers and onion; stir fry 2 to 3 minutes, or until tender-crisp.
Remove and reserve.
In same skillet, stir fry pork, bacon and chile for 2 to 3 minutes, until pork is just done and bacon crisp.
Return the vegetables to the skillet and heat through.
Serve over lettuce.
