SEAFOOD - CORN AND CRAB CHOWDER

Makes 6 servings.

2 T. olive oil
2 T. butter
3 potatoes, peeled and diced
3 celery stalks, chopped
1 yellow onion, chopped
1 red pepper, seeded and diced
1 bay leaf, fresh or dried
salt and pepper
1 1/2 T. Old Bay seasoning blend
5 T. all-purpose flour
3 c. vegetable or chicken broth
6 c. whole milk
4 1/2 c. frozen corn kernels
12 oz. cooked lump crab meat

oyster crackers
hot pepper sauce
sliced scallions

Heat oil and butter in a large stockpot over medium heat.
Add potatoes, celery, onion, red pepper and bay leaf and Old Bay seasoning; season to taste with salt, pepper and saute 5 minutes.
Sprinkle in flour and cook 2 minutes, stirring constantly.
Stir in broth and milk and bring up to a bubble.
Add corn and crab meat; simmer 5 minutes.
Remove bay leaf and ladle into bowls.
Top with oyster crackers, hot sauce and sliced scallions.
