Makes 8 servings.

12 oz. egg noodles, cooked and hot
2 lbs. lean ground beef
1 c. chopped onion
1 T. olive oil
salt and pepper
1 7.5-oz. can tomato sauce
1 5.5-oz. can tomato paste
2 eggs, beaten
1/4 c. milk
2 c. creamed cottage cheese
1 10-oz. pkg. frozen chopped spinach, thawed
1/8 tsp. grated nutmeg
1 c. shredded Old Cheddar cheese
1/2 c. bread crumbs
1/2 c. grated Parmesan cheese
2 T. butter, melted

Preheat oven to 350F.

In a skillet, cook ground beef and onion in olive oil until browned; season to taste with salt and pepper.
Stir tomato sauce, tomato paste, eggs, milk, cottage cheese, spinach and nutmeg into drained pasta. Add meat mixture. Stir to blend.
Spoon into a 3-qt. Casserole; sprinkle with Cheddar cheese.
Bake covered at 350F for 20 minutes. Remove cover.
In a small bowl, stir together bread crumbs, Parmesan cheese and melted butter. Sprinkle on top of casserole.
Bake an additional 10 minutes to brown.
