BEEF - MINESTRA PASTA E FAGIOLI

Makes 6 to 8 servings.
1/2 lb. ground beef
1 onion, quartered, then cut in half
3 T. olive oil
2 cloves garlic, minced
1 15-oz. can diced tomatoes
1 15-oz. can tomato sauce
3 c. chicken stock
2 c, water
1 T. dried parsley
1/2 T. dried basil
1/2 T. dried oregano
1 tsp. crushed pepper flakes
1 15-oz. can cannellini beans
1 15-oz. can navy beans
1/2 c. grated Parmesan cheese
1/2 lb. ditalini pasta, cooked
In a large pot over medium heat, cook ground beef and onion in olive oil; stir in garlic and cook until tender.
Reduce heat, stir in tomatoes and sauce, stock, water, parsley, basil, oregano, pepper flakes, cannellini and navy beans and Parmesan.
Simmer 30 minutes; stir in cooked pasta and simmer an additional 30 minutes.
