POTATOES - CREOLE ROASTED

Category: Potato Sides

Makes 4 servings.

2 lb. white potatoes, coarsely chopped
3/4 lb. andouille sausage, sliced
1 green pepper, chopped
2 cloves garlic, minced
1 onion, chopped
2 T. olive oil
1 T. paprika
1 T. Creole Seasoning Joie de Vivre
1 tsp. black pepper

Preheat oven to 400F.
Place potatoes, sausage, green pepper, garlic and onion into a high-sided roasting pan
Drizzle with olive oil and toss to coat.
Sprinkle with paprika, Creole Seasoning and black pepper; toss again to coat.
Roast at 400F for 45 to 60 minutes, or until potatoes are tender and beginning to turn golden brown. Stir occasionally during roasting.
