Makes 4 servings.
2 T. butter, melted
2 T. olive oil
1/2 tsp. Tabasco sauce
1/4 tsp. dried thyme
1/2 tsp. dried rosemary
3 baking potatoes, thinly sliced
salt and pepper
Preheat oven to 450F.
In small bowl, combine butter, oil, Tabasco, thyme and rosemary; stir to blend.
Brush bottom of a cast iron skillet with 1/4 of butter mixture; spread 1/3 of the potato slices in pan.
Brush potato slices with butter mixture; season lightly with salt and pepper.
Repeat with remaining potato slices and butter mixture, seasoning each layer lightly with salt and pepper, and ending with last of the butter mixture.
Place skillet over medium-high heat until potatoes begin to sizzle.
Transfer to oven and bake at 450F for 25 to 30 minutes, or until golden.
Invert on to serving dish.
