Makes 4 servings.
1 cup orange juice
2 T. grated orange rind
6 cloves garlic, minced
1/4 c. soy sauce
1 T. brown sugar
1 1/2 tsp. salt
1/2 tsp. black pepper
4 lb. chicken wings
Heat oven to 400F. Line baking sheets with parchment paper.
In a large bowl, combine orange juice and rind, garlic, soy sauce, brown sugar, salt, and pepper; add the chicken wings and toss to coat.
Arrange wings in a single layer on baking sheets.
Measure and reserve 1/4 cup orange mixture; spoon the rest of the mixture over the wings.
Bake at 400F for 20 minutes. Turn wings over and baste with reserved orange mixture. Continue baking for 10 to 15 minutes longer, or until done.
