EGGS - TORTILLA SCRAMBLE

Makes 4 servings.

2 T. butter
10 eggs
1/2 c. light cream
1/2 tsp. ground cumin
2 c. coarsely broken tortilla chips
1 c. shredded Old Cheddar cheese
2 T. chopped fresh cilantro
salsa, warmed
salt andpepper

Melt butter in large skillet over medium-high heat.
Beat eggs, cream and cumin in a large bowl; pour into skillet.
Cook, stirring frequently, until eggs start to set.
Sprinkle with tortilla chips and cheese.
Continue cooking, stirring frequently, until eggs are cooked through.
Sprinkle with cilantro; serve with salsa.
Season with salt and pepper to taste.
