Makes 4 servings.

1 c. strawberries
1 c. blueberries
1 c. raspberries
3 T. granulated sugar
2 T. cornstarch
2 T. cold water
1 T. fresh lemon juice
pastry dough to yield one 9-inch pie crust
Whipped cream, ice cream, or low-fat frozen yogurt

Preheat the oven to 350F.
Combine berries and sugar in a sauce pan over medium heat.
Cook for about 10 minutes, or until juices are released.
Mix cornstarch with cold water; add to berries and blend.
Stir in lemon juice.
Ladle into 4 individual custard cups or one 9-inch round baking dish
Roll out pastry dough and cut out disks large enough to cover custard cups
Place pastry disks on top of the berry mixture in custard cups; place on a baking sheet to catch any spills.
Bake for 20 minutes or until crust is golden.
Before serving, top with any of the garnishes.
