SPREAD - BLUE CHEESE PECAN

Makes 3 cups.

1 lb. blue cheese, crumbled
4 T. butter, softened
1/4 c. whipping cream
1 clove garlic, minced
1 c. finely chopped pecans, toasted
4 green onions, finely chopped
1/4 c. chopped Italian parsley
toasted baguette slices
unsalted crackers
pear or apple slices

Place blue cheese, butter, cream, and garlic in a food processor or blender.
Cover and process until nearly smooth. Transfer mixture to a mixing bowl or crock; fold in pecans, green onions, and parsley. Cover and chill at least 4 hours or overnight.
For easier spreading, remove mixture from refrigerator at least an hour before serving to soften.
Serve at room temperature with baguette slices, crackers and sliced pear or apple.
