Serves/Makes: 8
Ready in: 30-60 minutes
- 1 cup raisins
- boiling water
- 7 cups soft bread cubes
- 3/4 cup butter
- 1 cup chopped onion
- 1 cup chopped celery
- 1 clove garlic, minced
- 3 cups unpeeled diced tart apples
- 1/4 cup finely chopped fresh parsley
- 1 1/2 teaspoon salt
- 1/4 teaspoon paprika
Preheat the oven to 350 degrees F. Grease a 2-quart baking dish. Place the raisins in a heat-proof bowl. Add enough boiling water to cover the raisins and let them sit in the hot water for 5 minutes. Drain the raisins, then add them to a large bowl with the bread cubes. Melt the butter in a skillet over medium heat. Add the onions, garlic, and celery. Cook, stirring frequently, for 4-5 minutes or until soft. Add the onion mixture to the bread cubes and toss gently to combine. Add the diced apples, parsley, salt, and paprika to the bread cubes and toss gently. Transfer the dressing mixture to the prepared baking dish, spread it evenly in the dish. Place the dressing in the oven and bake at 350 degrees F for 30-40 minutes, or until heated through and slightly crisp and browned on top.
