BLT Tacos With Spicy Cream Salsa

Ready in: 2-5 hrs
- 2 green onions, green part only, minced
- 2 jalapenos, seeded and chopped
- 1 tomato, chopped
- 1 cup cooked corn
- 1/2 cup ranch dressing
- 1 pinch cayenne pepper
- 8 flour tortillas (6- to 8-inch size), skillet-warmed
- 16 strips bacon, cooked and crumbled
- 1 cup shredded jalapeno Jack cheese
- 2 cups shredded lettuce
In a medium bowl, combine green onions, jalapenos, tomato and corn. Add ranch dressing and cayenne and stir until well blended. Cover and refrigerate for at least 2 hours or for up to 6 hours. To build tacos, divide bacon equally among tortillas. Top with spicy creamy salsa, cheese and lettuce. Fold tortillas in half. Serve.
