  • 5 pounds russet potatoes
  • 1 pound Velveeta cheese
  • 5 slices cooked bacon, crumbled
  • 2 cups mayonnaise, or as needed

Preheat the oven to 400 degrees F. Grease a 9x13-inch baking dish.

Wash the potatoes and poke the skin with a fork several times. Place in the oven and bake at 400 degrees F for 45 minutes or until soft. They can also be baked in the microwave. Remove the potatoes from the oven and let cool enough to handle. Cut the potatoes into slices or cubes when cool and place in a bowl.

Dice the cheese and add to the bowl along with the bacon. Add the mayonnaise in increments (1/2-1 cup at a time) and mix gently to coat the potatoes. Only add enough mayonnaise to coat the potatoes completely (you may not need the full amount).

Transfer the potato mixture to the greased baking dish. Place in the oven and bake at 400 degrees F for 45 minutes or until the top is browned and the mixture is bubbly in the middle.

Remove the dish from the oven and let cool for 5 minutes before serving (it will be very hot).
