Aztec Quiche

- 1 1/4 cup Monterey Jack cheese, grated
- 3/4 cup Cheddar cheese, grated
- 1 deep dish (9 \") frozen pie shell
- 1 can (4 ounce size) diced green chiles
- 1 cup half and half
- 3 eggs, beaten lightly
- 1/2 teaspoon salt
- 1/8 teaspoon cumin
Spread Monterey Jack cheese and half of the cheddar over the bottom of the pie shell. Sprinkle diced chiles over cheese. Stir together in a bowl the half and half, eggs and seasoning. Pour carefully into pie shell. Sprinkle with remaining cheese. Recipe can be frozen at this point if desired: Cover pie with foil and put in freezer. To bake: if frozen, remove foil and thaw. Bake uncovered at 325 degrees F for 40-50 minutes. Serve immediately.
