  • 4 cups flaked coconut
  • 1 can (14 ounce size) sweetened condensed milk
  • 1/2 teaspoon almond extract
  • 3 ounces strawberry gelatin powder

In a large bowl, combine all ingredients. Mix thoroughly, making sure gelatin is blended evenly. Cover and refrigerate for at least 2 hours.

Preheat oven to 350 degrees F.

Shape dough into 1" balls and place on well-greased cookie sheet. Bake for 8-10 minutes.

Remove from oven and let cookies cool on baking sheet for 5 minutes before placing on wire rack to cool.
