  • 1 tablespoon vegetable oil
  • 3 1/2 pounds beef short ribs
  • 4 medium potatoes, peeled, quartered
  • 1 large onion, cut into wedges
  • 4 medium carrots, sliced
  • 1 cup water
  • 1 cup ketchup
  • 1/3 cup red wine vinegar
  • 1 tablespoon paprika
  • 1 teaspoon curry powder
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon dry mustard
  • 2 teaspoons salt

Heat the oil in a large skillet over medium-high heat. Add the short ribs, in batches if needed, and brown on all sides.

Add the potatoes, onions, and carrots to the crock pot. Place the browned ribs on top.

Mix together the remaining ingredients in a bowl or large measuring cup and whisk well to combine. Pour over the ribs and vegetables.

Cover the crock pot and cook on low heat for 6-8 hours or until the beef is tender and the vegetables are cooked.

Serve hot.
