One Pot Seafood Boil

5 pounds whole fresh shrimp ( in shell)
3 dozen small clams (in shell optional, make sure shells are closed when purchased)
3 pounds smoked sausage (Hilshire Farms Smoked Beef Sausage or Hot Chipotle Smoked Sausage are favorites)
3 pounds small red potatoes, skin on-cut in half if large
3 large white onions quartered
5 pounds of fresh corn on cob cut into 4 inch pieces
1/2 stick butter
2 sliced lemons
6 cloves garlic, minced
Old Bay seasoning to taste( add gradually and taste)
1 bottle of beer (optional)
Salt and Pepper to taste

Add potatoes, onion, seasonings, garlic, lemon, butter in huge stockpot. Cover with water and add beer. Simmer with lid on until almost done. Add corn and sausage, then simmer until corn is almost done. Add shrimp & clams.
Cook until clams just open and shrimp are pink. Don't overcook, it will make the seafood tough.

Serve hot with various hot sauces, crackers or cornbread.
