Bourbon-Spiked Vidalia Onion BBQ Sauce

2 cups medium diced Vidalia onions
1/4 cup butter
1/2 cup bourbon
1 cup store-bought tomato-based sweet barbecue sauce

Makes about 2 1/4 cups.
Sauté onions in butter in a skillet over medium heat until softened and lightly caramelized,stirring occasionally.

Add bourbon and stir to deglaze the skillet and lift any delicious browned bits of onion off the bottom of the skillet. Remove from the heat and stir in the barbecue sauce.

Serve with pulled smoked pork. Also delicious served with grilled chicken, pork or beef.

2 C. mayo 1 pkg. Kraft Natural Italian Style Cheese Crumbles 1 large Vidalia onion, chopped (2 c) Mix all ingredients, bake in 8x8 pan, 30 min. 375 degrees. Serve with triscuits.
