20 Minute Baked Chicken Breasts

- 4 boneless, skinless chicken breast halves
- salt and pepper, to taste
- 1 tablespoon cooking oil
Preheat oven to 350 degrees F. If the chicken is an uneven thickness, pound it gently with a meat mallet to even it out. Season the chicken with salt and pepper, to taste. Heat the cooking oil in a large non-stick skillet over medium high heat for about 2 minutes. Carefully place the chicken in the pan, evenly spaced. Cook for about 4 minutes on each side or until golden brown. Place the browned chicken in a baking dish. Bake uncovered at 350 degrees F for about 10 minutes or until cooked through. Test for doneness by piercing the meat with a fork (juices should run clear) or by using a meat thermometer.
