Sausage And Rice Jambalaya

- 1 pound smoked sausage, cut in thin slices
- 1/2 cup chopped onions
- 1/2 cup chopped bell pepper
- 1/2 cup chopped celery
- 1 can (16 ounce size) diced tomatoes, undrained
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried thyme
- 1/2 teaspoon cayenne pepper
- 2 cups cooked rice
In a large saucepan or skillet, cook the sausage, onion, bell pepper, and celery over medium-high heat until the vegetables are tender. Stir in the tomatoes, garlic powder, thyme, and cayenne. Let the mixture simmer for 5-10 minutes or until heated through. Stir in the cooked rice and let heat for 5 more minutes. Serve hot.
