Gourmet Scalloped Potatoes

- 1 clove garlic, minced
- 1 shallot, minced
- 3 tablespoons butter
- 1 1/4 cup milk
- 1 1/2 cup whipping cream
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 1/2 pounds red potatoes, sliced 1/8-inch thick, peeled if desired
- 4 ounces shredded Gruyere cheese
- 1/4 cup grated Parmesan cheese
Preheat the oven to 350 degrees F. Grease a 9x13 baking dish. Combine the garlic, shallot, and butter in a skillet over medium heat. Cook, stirring frequently, for 2 minutes. Add the milk, whipping cream, salt, and pepper to the skillet. Mix well and cook, stirring frequently, for 1 minute. Add the potatoes to the skillet. Bring the liquid to a boil and cook, stirring gently, for 3 minutes. Transfer the potatoes to the baking dish. Top with the shredded cheese. Place the baking dish in the oven and bake at 350 degrees F for 45 minutes. Remove from the oven and let stand for 15 minutes before serving. The sauce will thicken as it cools.
