Ready in: 30-60 minutes
- 2 cloves garlic
- 1/4 cup vegetable oil
- 1 quart stewed tomatoes
- 1 package frozen spinach
- 1 cup uncooked rice
Saute garlic in oil. Add tomatoes and simmer for 1/2 hour. Add spinach and rice. Cover tightly and cook until rice is tender, adding more water or tomato juice if needed. Add salt and pepper to taste. This is unusual and very tasty.
