1 cup walnuts
1 package ramen noodles, uncooked
4 tablespoons unsalted butter
1 head romaine lettuce, torn in pieces
1 bunch broccoli, cut
4 green onions, sliced
1/2 cup dried cranberries (Craisins)
1 cup vegetable oil
1/2 cup red wine vinegar
1/2 cup sugar
3 teaspoons soy sauce
Salt and pepper, to taste
Instructions:
Toast walnuts and ramen noodles in butter. Toss romaine, broccoli, onions, walnuts, ramen noodles and dried cranberries together.
Whisk together oil, vinegar, sugar and soy sauce to make dressing. Add salt and pepper to taste. Pour dressing over salad just before serving.
Serves 6 to 8.
